Ingredients

  • Country bread, halved6 slices
  • Ripe tomatoes3
  • Mozzarella or white cheese150 g
  • Extra-virgin olive oil3 tbsp
  • Dried oregano1 tsp
  • Garlic (optional)1 clove
  • Black olives (optional)a handful

Method

  1. Heat the oven to 200°C or prepare the grill.
  2. Toast the bread slices hard on one side only, 5 to 7 minutes, until golden.
  3. Dice the tomatoes small and drain the excess juice so the bread stays crisp.
  4. Cut the cheese into small pieces and slice the olives thinly.
  5. While the bread is warm, rub it lightly with garlic and drizzle with a little olive oil.
  6. Spread the tomatoes and cheese over the bread and add the olives.
  7. Sprinkle with oregano and sea salt, finish with a thread of olive oil and fresh basil.
  8. Serve at once, while the bread is still crisp.

Tips and variations

  • Tomatoes are everything. Choose ripe, seasonal tomatoes. The sweeter the tomato, the better the bruschetta.
  • Roast the tomatoes for deeper flavour. For an even richer version, roast cherry tomatoes with a little olive oil and oregano for 15 minutes before topping.
  • Keep the bread crisp. Toast the bread just before serving and assemble at the last minute.
  • Variations. Try feta instead of mozzarella, or add a touch of balsamic glaze for a sweet-sharp note.
